Asparagus with Garlic and meal plan for the week

I thought I would go ahead and start this post off with a recipe. Depending on my level of organization I’m going to try and do this every week πŸ™‚

Today’s Recipe: Asparagus with Garlic
It’s super simple, and one of our favorite ways to serve asparagus.

1lb of asparagus
2-3 cloves of garlic (or more or less, your preference, we like a lot)
1 Tbsp Dijon mustard
Olive oil

Cut off ends of asparagus, place in frying pan on the stove.
Finely chop the garlic (I do mine in my garlic press), add to asparagus, add the mustard and drizzle with olive oil. Let it marinate for 15-20 min (if you’re short on time, this step can totally be skipped, I just think the flavors mingle better with the marinade).
Right before you’re ready to serve turn on pan and cook until desired tenderness. I usually do about 4-5 min.

We’re also doing Karl’s birthday party, so cupcakes for dessert πŸ™‚

Taco enchiladas. Basically using some leftover taco meat to make some enchiladas.

Butter Chicken, Rice and green beans

Leftovers

Potatoes Soup

Friday
Date night-in
Steak of some kind (Jared’s cooking! Yay!!!).
